Anything Goes Quick & Easy Quinoa Medley Recipe

I just discovered quinoa last year. I know. I’m a little late on this one, but I love it.

It took so long to try it, because I kept hearing how hard it was to cook. I shouldn’t have listened. Everyone says the same thing about rice, and I just don’t get it. It’s so simple to cook. Everyone always asks how I cook my rice. I don’t know…the directions on the bag?  ¯\_(ツ)_/¯ 

I also felt like quinoa didn’t wow some people. They were wrong, too.

It was easy to cook and yummy! I use mine different ways. One of my faves was turning it into a faux taco meat. It was great to add to nachos, tacos, and burritos.

Some days, though, I just don’t have the time to cook, but I still love healthy food. And I’m a fan of cheap, too.

I stumbled across this by accident. Every once in a while, I like to check out new things to try at the grocery store. I ran across this amazing quinoa, brown rice, kale, garlic, and olive oil medley. It was love at first taste. Then they promptly didn’t carry it again for forever. But now it’s back!

It’s so easy. All you do is throw it in the oven and cook until it’s done. It is AMAZING as part of a one pan sheet dinner. I add Brussels sprouts and corn to mine when I cook it. The corn adds just a touch of sweetness to it, and well, Brussels sprouts are just amazing. Why are they so hated? It’s like the one vegetable all of America agreed to be the ONE vegetable no one was going to like? But you can add ANYTHING to it! Add a meat or any kind of protein you want! You can even add your own blend of extra seasoning to make it something entirely different.

Oh, wow. I just had an idea. I bet this quinoa medley would be great with Mexican seasoning and use it in a burrito! I might be a food genius right now. I’m already planning this out. I’ll add black beans and Mexican seasoning to the frozen quinoa medley (leave out the Brussels sprouts), and throw it on a pan in the oven. You could add cheese, tomatoes, avocado or guacamole…oh, and salsa. Y’all. I’m dying here. It just keeps getting better. Then throw it all in a tortilla. That sounds crazy good and easy. Throw in some Simply Limeade Margaritas, and you have yourself a party.

Whether you make your own quinoa or go for the quick and easy frozen quinoa medleys, you can’t go wrong.  And anything goes.

Anything Goes Quick & Easy Quinoa Medley

This quinoa medley is such a versatile dish. The possibilities are endless. And it’s perfect for a night where you want something easy, quick, and healthy that tastes DELICIOUS!

Ingredients
  

  • 1 bag Frozen Quinoa Grain Medley I LOVE the Great Value one at Walmart. It’s called Great Value Grain Medley Quinoa with brown rice, kale, red quinoa, and garlic.
  • Frozen Corn I don’t measure. There is absolutely no right or wrong. It really is whatever you want.
  • Brussels Sprouts Again…a lot or a little.
  • Anything else you want!

Instructions
 

  • Preheat the oven to 400.
  • Line a baking sheet with foil or parchment paper or just spray your pan and add all your yummy things. All together. You can mix it up like I do, or keep it all separated in case not everyone likes everything. 
  • Bake for about 25-30 minutes and check. Go longer if needed. 

Notes

Experiment with seasonings, making it with Mexican seasonings for your burritos or whatever you want. Add your protein on the baking sheet, and it’s a delicious one pan sheet dinner!
